Ingredients

  • Meatloaf
  • 2/3 c milk

  • 1 c breadcrumbs

  • 1 egg

  • 1 1/2 lbs ground beef

  • 1/4 c onion, chopped

  • 1 c green olives, chopped (didn’t try this last time)

  • 3 cloves garlic

  • 1 tsp honey mustard

  • 1/4 c ketchup

  • Adobo seasoning, to taste

  • Salt and pepper, to taste

  • Glaze
  • 1/2 c ketchup

  • 1 tbsp Worcestershire Sauce

  • 1 tsp honey mustard

  • Salt and pepper, to taste

Directions

  • Preheat oven to 350°. Lightly grease loaf pan or baking dish or line with parchment paper to prevent sticking.
  • In a large bowl, combine all meatloaf ingredients and gently mix until combined thoroughly.
  • Press the meat mixture into the loaf pan or baking dish.
  • For the glaze, whisk all ingredients in a bowl until mixed thoroughly. Spread the glaze evenly over the top of the meatloaf.
  • Bake, uncovered, at 350° for 30 minutes.
