This is a slightly modified version of a recipe found a while back. The chicken always gets crispy and tender, but the sauce could use some tweaking to achieve the more familiar flavor of traditional General Tso’s Chicken.

3 lbs boneless skinless chicken thighs, cut into 1 inch chunks
3/4 c cornstarch
Peanut oil, for frying
1 tbsp minced ginger
1 tsp red chili flakes
4 cloves garlic, minced
- Sauce
1/2 c rice vinegar
1/2 c soy sauce
2 tbsp hoisin sauce
3/4 c water
1/3 c sugar
1/4 c honey
3 tbsp cornstarch
Directions
- Toss the chicken thighs with the 3/4 cups of cornstarch and let sit while mixing sauce ingredients.
- Add the rice vinegar, soy sauce, hoisin sauce, water, sugar and 3 tablespoons of cornstarch in a small bowl and whisk together.
- Add the chicken to a pan with peanut oil and fry until crispy.
- Remove chicken from the pan and drain all but a tablespoon of the oil and add the chili flakes, ginger and garlic. Cook until you smell the garlic (about 30 seconds).
- Return the chicken back to the pan and toss until seasonings are evenly coated. Add the sauce mix, stirring for about 30 seconds until thickened.
