Lasagna

I don’t quite remember the source of this recipe but I love lasagna and this is a pretty basic, yet delicious, way to experience the wonder. I’ve done this with oven-ready noodles and it was still pretty great.

Ingredients

  • 8 oz lasagna noodles

  • 1 tbsp salt

  • 2 tbsp olive oil

  • 1/2 white onion, diced

  • 2 tsp minced garlic

  • 1/2 green bell pepper, diced

  • 1/2 lb ground beef

  • 1/2 lb Italian sausage

  • 32 oz spaghetti sauce

  • 1 1/2 cups Ricotta cheese

  • 1 1/2 cups cottage cheese

  • 1 cup shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • 1 egg

Directions

  • Preheat oven to 375°. Fill a large pot 3/4 full of water, add salt and one tablespoon olive oil and bring water to a boil. Add in lasagna noodles and continue boiling until noodles are tender, then drain and let cool.
  • Meanwhile, in a medium saucepan, saute the onions and garlic with one tablespoon olive oil. Once onions are almost translucent, add in the bell pepper, ground beef, and sausage. Cook until meat is no longer pink, then drain any excess grease. Mix in the spaghetti sauce and continue cooking on low heat.
  • In a medium to large bowl, mix together the Ricotta cheese, cottage cheese, mozzarella cheese, half of the Parmesan cheese, and the one egg.
  • Begin layering a 13×9 oven pan by laying 4 of the lasagna noodles on the bottom of the pan, slightly overlapping each other. Cover the noodles with the cheese mixture, followed by the meat sauce. Repeat this 2 additional times for a total of 3 layers. Cover the top layer with the remaining Parmesan cheese.
  • Bake uncovered for 30-35 minutes.
