Zuppa Toscana

Ingredients

1 lb Italian sausage
2 large russet potatoes
1 large onion
1/4 cup bacon
2 garlic cloves
2 cups kale
16 oz. chicken broth
4 cups water
1 cup heavy whipping cream

Directions

Chop sausage into small pieces and brown in soup pot. Add chicken broth, water, onions, potatoes, and garlic. Cook on medium heat until potatoes are done. Add cooked bacon. Salt and pepper to taste. Simmer for 10 minutes, then turn to low heat.

Add kale and cream, cook to heat through and thicken.
